Make Your Own Donuts

- 1 Tbsp. + 1 tsp. active dry yeast
- 1 c. whole milk
- 2-2½ c. (320-400 g) bread flour
- 1 tsp. pure vanilla extract
- 3 large egg yolks
- 2 Tbsp. (30 g) superfine sugar
- ½ tsp. table salt
- 4 Tbsp. (½ stick or 2 oz.) unsalted butter, softened at room temperature and cut into cubes
- 1 qt. vegetable oil for frying
- any other sprinkles or frostings you want to use!
Ingredients needed for glaze:
- 1 ½ cups (150 g) confectioners sugar, sifted to remove any lumps
- 3-4 Tbsp. milk or water
- 2 tsp. pure vanilla extract
Ingredients needed for chocolate glaze:
- 1½ c. (150 g) confectioners sugar
- 4 Tbsp. (27 g) cocoa powder
- 2 Tbsp. milk or water
- 2 tsp. pure vanilla extract
Ingredients needed for Hot Buttered Brandy:
- 1 c. water
- 1 Tbsp. dark brown soft sugar
- 1 Tbsp. butter
- a few small cinnamon sticks
- 3 cloves
- Optional: ½ cup (4 oz.) brandy
Ingredients needed for Caramel Apple Latte:
- 2 c. apple cider
- 1 c. whole milk
- 2 Tbsp. instant coffee
- 2 tsp. vanilla extract
- caramel sauce
- apple slices
Equipment Needed:
- stand mixer (best option) or a hand mixer in a large mixing bowl
- 2 or 3 mixing bowls
- whisk
- sifter
- spatula
- large mixing spoon
- damp cloths
- large pot or dutch oven for frying
- two sheet pans
- baking rack
- spider or tongs

This class is appropriate for ages 21+.

About the teacher:
Christin Ortiz has been working in restaurants since she was 19. Starting in the front of the house, she realized early on she preferred the back of the house. Having worked in different kitchens, she is most proficient in Italian and Hispanic cuisine. Most recently Christin ran the food program at Joe Bean Roastery, where she focused the menu on her Latin-American heritage. She loves sharing her passion for food, and wants everyone to be able to cook the food they crave!
