Make Your Own Easter Cheese Pie

Easter cheese pie is an Italian dessert always on the table for Easter dinner. The filling creates a rich dessert to enjoy after the 40 days of Lent when sweets were not allowed in the early days of the Catholic Church. There are variations of this pie across the regions of Italy. All variations include ricotta cheese and sometimes mascarpone. Some may have rice or fruit and it is always made in a pastry crust. Students are invited to cook along with the instructor's demonstration.

Ingredients Needed:
- 2 ½ c. flour
- ½ c. and 3 Tbsp. sugar

Equipment Needed:
- 9" pie pan
- plastic wrap
- flour for rolling
- rolling pin
- large mixing bowl
- small saucepan for melting shortening
- zester
- measuring spoons and cups
Age:
This class is appropriate for all ages, although anyone under the age of 16 should be supervised by an adult.
